This staple local food item is fried chicken battered in Japanese tempura.
It is commonly served in many restaurants and establishments in Oita. The locals enjoy it with kabosu citrus ponzu sauce and mustard.
400g Chicken breast
1 + 1/3 Tbsp Soy sauce
A pinch of grated garlic
5g ( 1/2 Tbsp) Sugar
50g (1/2 Cup) Flour
A dollop of water
Oil as appropriate for frying
Ponzu ( soy sauce mixed with citrus juice)
Vegetables, to garnish
1. Cut the chicken breast into bite-size chunks.
2. Put 1 and granted garlic into the bowl and marinate by rubbing it in. Add soy sauce and sugar, and marinate it.
3. Mix integredients for batter.
4. Add 2 into 3, and mix it together. And then deep-fry using the oil at 175 – 180℃ until they are deep golden brown colour and looks swollen. Take them out and serve with Ponzu sauce and Mustard paste.
